Fans of the flashy lobster often forget how delicious fresh crab can be. The white meat is particularly sweet and fresh-tasting and when poshed-up with some subtle curry flavourings, it’s just shockingly good.

Ingredients

Quantity Ingredient
200g fresh white crabmeat
100g butter
1/2 red chilli, deseeded and finely chopped
2 spring onions, very finely sliced, (scallions), white and green parts
small handful coriander leaves, finely chopped, (cilantro), plus extra to serve
1/2 lime, zested and juiced, (keep the other half to serve)
Few pinches curry powder
3 tablespoons greek-style yoghurt
4-8 thin slices brown bread
salt
freshly ground black pepper

Method

  1. Pick through the crab to make sure it contains no shell, then place in a bowl. Melt half the butter in a small pan and leave to cool. Stir the chilli, spring onions, finely chopped coriander, the lime zest and juice, curry powder, yoghurt and some seasoning into the crabmeat. Stir in the cooled butter. Pack into a jar or bowl. Melt the remaining butter, then leave to cool a little before spooning off any scum from the surface. Pour over the crab, leaving any milky solids behind in the pan. Leave to set in the fridge for about 30 minutes.
  2. When ready to eat, toast the bread and spread with the potted crab. Scatter over some coriander leaves and serve with lime wedges to squeeze over.
