Bone marrow is basically fat – delicious, rich, flavour-filled beef fat – and soaks into the toast in a way that will have you howling at the moon. Fortunately, gremolata is a sharp-flavoured and infinitely healthy combination of vegetable stuffs that entirely balances the marrow.

Ingredients

Quantity Ingredient
4 x 15cm lengths bone marrow halves, (about 700g total)
1 small red onion, very finely chopped
small bunch parsley, roughly chopped
2 tablespoons capers, drained and roughly chopped
1/2 lemon, zested
squeeze lemon juice
4-8 slices sourdough bread
salt
freshly ground black pepper

Method

  1. Preheat the oven to 180°C fan. Place the bone marrow on a baking tray and roast in the hot oven for about 15 –18 minutes, or until soft but not melting.
  2. Meanwhile make the gremolata. In a bowl, combine the onion, parsley, capers, the lemon zest and juice and some seasoning. Toast the bread.
  3. Remove the bone marrow from the oven and let everyone help themselves, scooping out the marrow and spreading it onto the toast then topping with spoonfuls of gremolata.
