Whipping feta elevates this humble, salty cheese to more than just something you sprinkle on salads at the last minute. Whipped, it is reinvented into a luxuriously smooth spread. Keep some in the fridge for all your kebab-eating escapades. It goes particularly well with these sweet and spicy squash patties.

For the squash patties

600g butternut squash, seeds removed and cut into 2.5cm
3 tablespoons olive oil
2 teaspoons cumin seeds
3 garlic cloves, roughly chopped
1 teaspoon ground coriander
400g chickpeas, drained and rinsed
1 red chilli, deseeded and finely chopped
large handful coriander, leaves and stems separated
50g fresh breadcrumbs
salt
freshly ground black pepper

For the whipped feta

200g feta, crumbled
2 tablespoons olive oil
1/2 garlic clove, crushed
50g greek yogurt

To serve

4 flatbreads
1 small red onion, thinly sliced

Method

  1. Start by making the squash patties. Preheat the oven to 200°C. Put the squash on a baking tray – leave the skin on because it adds a nice texture. Drizzle over 1 tablespoon of the olive oil and scatter with the cumin seeds, then toss to coat. Roast for 40 minutes, stirring halfway through, until the squash is tender and caramelized in places
  2. Scrape the squash into the bowl of a food processor. Add the garlic along with the ground coriander, chickpeas, chilli, and plenty of seasoning. Roughly chop the coriander stalks and add them to the food processor with the breadcrumbs and plenty of salt and black pepper. Pulse until combined but not smooth – you want to keep some texture.
  3. Divide the mixture into 12 equal portions, then using damp hands, shape the mixture into little patties. Then place them on a baking tray, and chill for 30 minutes.
  4. Meanwhile, make the whipped feta. Put the cheese, oil, garlic, and yogurt into a food processor and whizz until smooth. Scrape out and chill until needed.
  5. Heat the remaining oil in a large frying pan over a medium heat. Once hot, add the patties and cook for about 5 minutes, gently turning halfway through, and cook until golden and piping hot.
  6. Warm the flatbreads, spoon the whipped feta over the surface, top with the patties, red onion, and chopped coriander leaves.
