You will love this super-simple ice cream so much. It has to be the quickest, easiest dessert ever – and it’s perfect for using up those brown bananas that languish at the bottom of the fruit bowl. Barbequing bananas makes them intensely sweet and gooey.

Ingredients

8 small ripe bananas
3 tablespoons tahini
2 tablespoons maple syrup, plus extra to serve
pinch salt
1 tablespoon toasted sesame seeds, to serve

Method

  1. Peel and slice 4 of the bananas into 0.5cm pieces. Lay them in a single layer on a baking sheet and freeze for 2 hours, or until the banana slices are frozen solid. Remove from the freezer, tip into the bowl of a food processor, and add the tahini, maple syrup, and salt. Whizz until all the ingredients are combined and the mixture looks thick and creamy. Scrape into a freezerproof container and place in the freezer until ready to use. Remove from the freezer 10 minutes before you want to scoop.
  2. Heat a barbeque or griddle pan to high and cook the remaining bananas in their skins, turning a couple of times until the skins are blackened all over – it should take about 10 minutes.
  3. To serve, peel back the skins and serve with a scoop of banana ice cream, and sprinkle with the toasted sesame seeds and extra maple syrup, if liked.
