Spiced chicken & baba ganoush

This smoky baba ganoush enriched with luxurious tahini will work just as well with roast squash or fried halloumi.


Quantity Ingredient
2 medium aubergines, pricked all over with a fork
olive oil, for rubbing
2 green peppers
4 mild green chillies
200g greek yogurt
2 tablespoons tahini
1 garlic clove, crushed
1 lemon, juice
2 large tomatoes, deseeded and roughly chopped
handful coriander, roughly chopped
6 skin-on boneless chicken thighs
1 tablespoon ground cumin
1 tablespoon smoked paprika
freshly ground black pepper
4 flatbreads, to serve


  1. Heat a barbeque or grill to high. Put the aubergines on a baking tray and rub with a little oil. Cook for 25 minutes, but after 10 minutes add the green peppers and chillies to the tray. Cook until charred – keep watching as you just want them to blacken and soften but not to dry out. Transfer the peppers and chillies to a bowl and cover with clingfilm (plastic wrap). When the aubergines are charred, and soft when a skewer is inserted, remove from the heat and allow to cool. Halve the aubergines lengthways and scrape out the flesh using a spoon. Discard the skin. Tip the flesh into a food processor, then add the yogurt, tahini, garlic, and half the lemon juice. Whizz until smooth, season, and set aside.
  2. Remove and discard the charred skins from the peppers and chillies, then finely chop the flesh and add to a bowl with the tomatoes, coriander, and the remaining lemon juice. Set aside.
  3. Heat a griddle pan to hot, dust the chicken thighs with the cumin and paprika, then cook skin-side down for 5 minutes. Flip over and cook for a further 3–5 minutes until cooked through. Remove from the pan and allow to rest for a few minutes.
  4. Warm the flatbreads in a hot oven, spread with the baba ganoush, sprinkle over the salsa, and top with thick slices of charred chicken.
