Chimichurri apparently translates as a mix of ingredients, added in no particular order, and that’s how you should approach this sharp, herby sauce. Use any herbs you may have spare and spoon generously over the charred meat.

Ingredients

large handful flat-leaf parsley, roughly chopped
2 tablespoons oregano leaves
1 tablespoon thyme leaves
1 red chilli, deseeded and finely chopped
2 garlic cloves, crushed
2 tablespoons red wine vinegar
3 tablespoons olive oil, plus a drizzle
knob butter
400g onglet or hanger steak, trimmed of any sinew
200g cherry vine tomatoes
salt
freshly ground black pepper

Method

  1. To make the chimichurri sauce, put the parsley, oregano, and thyme on a large chopping board and run a sharp knife through the herbs until they are finely chopped. Add the chilli and garlic with some seasoning. Scrape into a bowl and add the vinegar and oil. Cover and set aside.
  2. Bring the steak to room temperature and rub it all over with a little oil. Heat a frying pan over a high heat, add the butter and when sizzling, add the steak and cook for 6–8 minutes, turning every couple of minutes and basting in the butter until brown all over. Remove from the heat, transfer the steak to a board, cover, and rest for 5 minutes.
  3. Meanwhile, return the pan to the heat and tip in the tomatoes. Fry for 3 minutes, shaking the pan to ensure the tomatoes cook all over. Warm a couple of flatbreads, thinly slice the steak, then pile on top of the bread, spooning on the tomatoes and any resting juices from the meat. Finally, dollop some chimichurri sauce on top before eating. Any leftover chimichurri can be stored in the fridge for up to a week.
