Ingredients

250g fillet beef steak
1 tablespoon pine nuts
1 tablespoon sesame seeds
1 tablespoon sesame oil
1 tablespoon soy sauce
1cm ginger, finely minced
1 garlic clove, finely minced
1 teaspoon freshly ground black pepper
1/2 teaspoons sea salt
1 korean pear, cut into matchsticks, to serve
2 quails eggs, yolks only, to serve

Method

  1. Slice the beef into 2-mm strips, and place in a bowl along with the pine nuts and sesame seeds.
  2. Mix the sesame oil, soy sauce, ginger, garlic and black pepper together in a small bowl, and then stir through the beef.
  3. Place a half of the Korean pear on each plate, and top with a neat circle of the beef. Make a small indentation with a teaspoon and place a whole egg yolk on each, either in the shell or directly into the beef. Serve immediately.
