Ingredients

4 eggs
pinch salt
1 teaspoon vegetable oil
2 spring onions, finely chopped
1 sheet gim

Method

  1. In a bowl, whisk the eggs along with a pinch of salt until smooth.
  2. Heat the oil in a medium-sized frying pan and pour the eggs in evenly, before scattering over the chopped spring onions. Let the omelette cook on a very low heat for 5–7 minutes, until you can see that the edges are just set and the middle is opaque.
  3. Place the gim sheet over the eggs, then carefully, fold the omelette over on itself four or five times. Pat it down gently with a spatula as you roll it, then transfer it to a chopping board.
  4. Allow the omelette to cool down for a few minutes, before carefully slicing into 1.5-cm slices. Serve hot or cold.
