Mini beef burgers

200g firm tofu
500g minced beef
2 tablespoons sesame oil
2 spring onions, finely chopped
2 garlic cloves, finely minced
1-2 teaspoons sea salt
generous grind black pepper
50g plain flour
2 tablespoons vegetable oil
2 eggs
1 teaspoon sea salt

Method

  1. Blitz the tofu in a food processor until well broken up, then combine with the beef, sesame oil, spring onions, garlic, sea salt and black pepper. If you wish to check the seasoning, fry off a small piece of the mixture in a hot frying pan until cooked through, then taste and season as needed.
  2. Divide the mixture in half, then half again until you have 16 equally sized pieces. Flatten each into a small, round burger, no thicker than 1.5cm, and dip each into the flour.
  3. Preheat your oven to 50°C. Heat one tablespoon of the vegetable oil in a large frying pan. Whisk the eggs with the salt then dip each floured burger into the egg mixture before transferring it directly into the pan.
  4. Fry the patties for 5 minutes on each side on a medium heat until cooked through, then transfer to a plate lined with kitchen paper. Keep warm in the oven. Add a little more oil to the pan, and continue until the burgers are all cooked. These are delicious served hot or cold.
