Ingredients

200g baby spinach
1 garlic clove, very finely chopped
1 spring onion, very finely chopped
2 tablespoons sesame seeds
1 tablespoon sesame oil
2 tablespoons soy sauce, plus extra to serve
1 teaspoon gochujang, optional, to serve

Method

  1. Bring a large pan of salted water to the boil and drop in the spinach. Cook for 10–20 seconds, until just wilted, then drain in a colander, shaking well. With kitchen paper, gently squeeze the spinach to remove any excess water.
  2. Mix the garlic, spring onion, sesame seeds, sesame oil and soy sauce in a bowl, then gently stir through the spinach. Taste and season with more soy sauce, and serve hot. For a spicier version of this dish, add a teaspoon of gochujang into the mix.
