Ingredients

2 large carrots
1/4 red cabbage
1/4 white cabbage
5 spring onions, finely sliced
1 tablespoon sesame oil
2 tablespoons white vinegar
1 tablepoon soy sauce
2.5cm ginger, finely grated
1 garlic clove, finely grated
1 tablespoon sesame seeds
sea salt

Method

  1. Slice the carrots into fine matchsticks. Slice the cabbages and spring onions finely. Place all the vegetables into a large bowl.
  2. Make the dressing by combining the sesame oil, white vinegar, soy sauce, ginger, garlic and sesame seeds in a small bowl and whisk well.
  3. Tip over the sliced vegetables, taste and season with sea salt as needed.
