Ingredients

100g white rice
1 tablespoons gochugaru
2 tablespoons Pickled cabbage
2 tablespoons sesame oil
2 tablespoons soy sauce
2 spring onions, finely sliced
2 spring onions, minced
2 garlic cloves, minced
2.5cm ginger, minced
200g calamari
1 tablespoon vegetable oil
1 carrot, peeled and cut into matchsticks

Method

  1. Rinse the rice, tip into a large pan of boiling salted water and cook for 12–13 minutes before draining. Return to the pan, cover and allow to steam dry for 10 minutes.
  2. Meanwhile, mix the gochugaru, gochujang, soy sauce, spring onions, garlic and ginger together in a bowl, then stir through the calamari. Cover and leave to marinate for 15 minutes.
  3. Heat the vegetable oil in a small wok or frying pan, and add the carrot. Stir-fry for 3 minutes, then add the calamari, and continue to stir-fry for a further 3–4 minutes until the calamari is cooked through. Serve over the hot rice.
