Spicy cold noodles

1 egg
200g somen noodles
50g Pickled cabbage
50g cucumber, cut into matchsticks
50g carrot, peeled and cut into matchsticks
2 tablespoons gochujang
1 tablespoon gochugaru
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon honey
1 garlic clove, minced
1 teaspoon sesame seeds

Method

  1. Bring a large pan of water to the boil and add the egg. Simmer for 7 minutes.
  2. Meanwhile, make the sauce by mixing the gochujang, gochugaru, soy sauce, rice vinegar, honey, garlic and sesame seeds for the sauce together in a bowl, and set aside.
  3. Remove the egg from the water using a slotted spoon and transfer to a bowl of cold water, before peeling and halving.
  4. Bring the water in the pan back to the boil, add the noodles and cook for 2 minutes before draining. Top with the sauce, kimchi, cucumber, carrot and egg, and serve immediately.
