Noodles in pine nut broth

Ingredients

100g pine nuts
1 teaspoon salt
200g buckwheat or soba noodles
100g cucumber, cut into long matchsticks
2 teaspoons black sesame seeds, to serve

Method

  1. Toast the pine nuts in a heavy-based frying pan, and on a very low heat, for 5–10 minutes, shaking the pan frequently, until barely golden. Transfer the pine nuts to a blender with the salt and 350ml water, and blitz until completely smooth. Refrigerate for 30 minutes until well chilled.
  2. Bring a large pan of water to the boil, add the noodles and boil for 5 minutes (or according to the packet instructions), until just cooked. Drain and rinse well.
  3. Divide the noodles between four bowls and top with the cucumber. Pour over the pine nut broth, scatter over the sesame seeds and serve.
