Ingredients

2 litres anchovy broth or fish stock
250g Pickled cabbage
1 onion, finely chopped
2 garlic cloves, minced
5cm ginger, minced
1 tablespoon gochugaru
1 teaspoon gochujang
1 x 400g tin baked beans, rinsed
1 x 340g tin spam, sliced
600g hot dogs, sliced into 1-cm chunks
300g bacon, cut into 2-cm pieces
200g instant ramen noodles
soy sauce, to taste
2 spring onions, finely sliced, to serve

Method

  1. Strain the anchovy broth into a large stockpot, and add the kimchi, onion, garlic, ginger, gochugaru and gochujang. Bring to the boil and simmer for 15 minutes.
  2. Stir through the baked beans, then add the sliced spam, hot dogs and bacon to the pan. Simmer for a further 10 minutes until the bacon and hot dogs are cooked through. Add the ramen noodles and simmer for another 2–3 minutes, until the noodles have softened.
  3. Taste and season with soy sauce to taste, then serve scattered with the spring onions.
