Ingredients

Quantity Ingredient
5 spring onions, roughly chopped
30g coriander leaves and stems
15g bunch thyme, leaves only
4 garlic cloves, peeled
1 green pepper, roughly chopped
1 stick celery, roughly chopped
1 green scotch bonnet chilli, deseeded
1 teaspoon sea salt
2 tablespoons vegetable oil

Method

  1. Place all the ingredients in a food processor with 2 tablespoons water and blitz until smooth.
  2. Taste and adjust the salt as needed, and serve the sauce with any Caribbean dish. It is particularly good alongside the Jerk Sweet Potato Fries or any jerk dish. Store in the fridge for up to a week.
