Cucumber sandwiches with mint

It wouldn’t be an afternoon tea without some finger sandwiches. Don’t make them too far in advance – a soggy or dry sandwich could be your undoing! Prepare them about an hour ahead, covering them with plastic wrap and keeping them in the fridge until your guests arrive.

Ingredients

Quantity Ingredient
1/2 seedless cucumber, peeled and sliced
1/4 cup fresh mint, finely chopped
60g softened butter
60g cream cheese
16 slices white bread, crusts removed
salt

Method

  1. Gently blot the cucumber slices to dry off any excess moisture. Blend the mint, butter and cream cheese in a mixing bowl. Evenly spread the mixture onto 8 slices of bread. Lay the cucumber slices on top of the mixture and season with salt. Top with the remaining bread, and cut the sandwiches into fingers or quarters to serve.
