Ingredients

Quantity Ingredient
4 eggs, hardboiled and chopped
4 tablespoons good mayonnaise
salt and pepper
1 punnet cress
16 thin slices white or wholemeal bread, crusts removed

Method

  1. In a large bowl, mix the chopped eggs and mayonnaise and season to taste.
  2. Spread half of the slices of bread with the egg mixture and sprinkle some cress on top of each one, reserving some for garnishing. Top with the remaining bread, and cut the sandwiches into fingers or quarters. To serve, garnish with the remaining cress.
