Passionfruit yoyo biscuits

Ingredients

300g plain flour
300g soft butter
100g icing sugar
100g custard powder
pinch salt
1/2 teaspoon vanilla extract
2 passionfruits
60g melted butter
250g icing sugar, additional

Method

  1. Preheat oven to 180°C.
  2. Beat together flour, butter, icing sugar, custard powder, salt and vanilla. Roll into small balls and place on a greased baking tray. Press down with the prongs of a fork to form a round biscuit. Bake in preheated oven for 10–15 minutes, until cooked but not coloured. Allow to cool completely.
  3. Strain the pulp from passionfruit to remove seeds. Mix with butter and icing sugar until smooth. Spoon a small amount of passionfruit butter onto one biscuit half and top with another biscuit. Continue until all biscuits are ready.
