180g butter
180g dark chocolate, chopped
3 eggs
1 teaspoon vanilla extract
250g caster sugar
110g plain flour
1 teaspoon salt
180g chopped walnuts

Method

  1. Preheat oven to 180°C.
  2. Butter and line a shallow tin.
  3. Melt the butter and chocolate together by placing them in a bowl over a saucepan of simmering water or in a microwave on low for 1–2 minutes. Beat the eggs, vanilla and caster sugar together until light and doubled in bulk. Sift the flour and salt together. Add the flour, melted chocolate and walnuts to the beaten eggs and mix to combine.
  4. Pour into the prepared tin and bake in the preheated oven for 25 minutes. Take care not to overcook the brownies or they will lose their deliciously gooey texture. Allow to cool before cutting.
