Smoothies are my go-to breakfast on those days when I’m in a rush or when I have been up early and exercising. On both occasions I want something quick, easy and refreshing. This smoothie is a summer favourite, particularly after a morning run, as it tastes so fresh and also gives you immediate rehydration and an energy boost. You can add less water than the recipe suggests, if you prefer a thicker texture.

Ingredients

Quantity Ingredient
4 medium apples
1/2 lemon
1/3 cucumber
handful spinach
8 mint leaves
375ml water

Method

  1. Core the apples and peel the lemon, then blend all the ingredients together. (There’s no need to peel the apples, but do wash them carefully.)
  2. This will give you a reasonably thick smoothie, so add a little more water or ice if you wish.
