Ingredients

Quantity Ingredient
770g sugar
140g unsalted butter, cubed
150g shelled, dry-roasted pistachios, roughly chopped
1 teaspoon cider vinegar
1 teaspoon salt
1 quantity Stovetop popcorn
or 2 quantities Microwave popcorn

Method

  1. Grease and line a baking tray with baking paper. Heat the sugar in a dry, large heavy-based saucepan over medium heat, stirring constantly with a fork. Once the sugar starts to melt, stop stirring and leave it to cook, swirling the pan occasionally, until the caramel is a deep golden brown.
  2. Reduce the heat to low and stir in the butter, pistachios, vinegar and salt. When the butter has melted, add the popcorn and stir to coat. Spread onto the prepared baking tray and press down with a spatula. Allow to cool completely before cutting or breaking into pieces.
