Ingredients

Quantity Ingredient
115g unsalted butter
115g caster sugar
3 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon bicarb soda
1/2 teaspoon vanilla essence
1 quantity Stovetop popcorn
or 2 quantities Microwave popcorn

Method

  1. Preheat oven to 140°C. Grease and line a baking tray with baking paper. Combine the butter, sugars and salt in a saucepan over medium heat. Cook, stirring constantly, until the sugar dissolves. Bring to the boil, then reduce the heat and simmer without stirring for about 5 minutes, until golden brown. Remove from the heat and mix in the bicarb soda and vanilla.
  2. Pour the caramel over the popcorn and stir to coat. Spread onto the prepared baking tray and bake, stirring every 15 minutes, for 45 minutes. Allow to cool completely before breaking into pieces.
