Ingredients

250g vermicelli
4 fresh artichoke hearts, quartered
or 250g frozen artichoke, quartered
100g smoked lardons
1 onion, thinly sliced
1 garlic clove, finely chopped
125g mascarpone
2 tablespoons grated pecorino
1 lemon, juiced
2 tablespoons olive oil
1 teaspoon rock salt
freshly ground black pepper
750ml water

Method

  1. Put all the ingredients into a large saucepan in the order listed. Cook for approximately 15 minutes over a medium heat, stirring regularly. About 2 cm of cooking liquid should remain at the end.
