Marinated tofu skewers

Ingredients

Quantity Ingredient
300g silken firm tofu
potato flour, to dust
2 tablespoons oil
4 bamboo skewers, soaked in water for 30 minutes, to serve

Marinade

Quantity Ingredient
60ml japanese soy sauce
2 tablespoons sake
2 tablespoons mirin
1 teaspoon finely grated ginger
2 spring onions, finely chopped, green part reserved, for garnish

Method

  1. Place the tofu on a plate. Top with another plate and set aside, occasionally draining the liquid that escapes, for 2 hours. Cut into eight pieces.
  2. To make the marinade, combine all the ingredients. Transfer half to a small serving bowl. Place the tofu in the remaining marinade and leave to marinate for 20 minutes. Drain and pat dry.
  3. Place some potato flour on a plate. Add the tofu and toss to coat.
  4. Heat the oil in a large frying pan over medium–high heat. Add the tofu and cook, turning carefully, for 3 minutes, or until crisp.
  5. Thread two pieces of tofu onto each skewer. Sprinkle with the reserved spring onion and serve with the rice and the reserved marinade for dipping.
