Ingredients

Quantity Ingredient
4 gingko nuts
1/2 teaspoon dashi granules
3 eggs
1 tablespoon japanese soy sauce
1 tablespoon sake
pinch salt
4 raw prawns, peeled, deveined and cut in half lengthways
2 shiitake mushrooms, stems removed and cut in half
4 x 5mm thick slices kamaboko

Method

  1. Put the gingko nuts in a small heatproof bowl. Pour over 250 ml boiling water. Set aside and leave until the water has cooled. Drain and set aside.
  2. Put the dashi granules in a bowl. Add 125 ml warm water and stir until the granules have dissolved.
  3. Gently beat the eggs with a pair of chopstick, being careful not to make the eggs go frothy. Add the dashi mixture and 375 ml water and stir with chopsticks to combine. Strain through a fine sieve into a bowl. Stir through the soy sauce, sake and salt.
  4. Sit two prawn halves in the base of four 250 ml ramekins. Top with half a mushroom, a gingko nut and a slice of kamaboko. Gently pour the custard into the cup.
  5. Half fill a wok or large saucepan with water and bring to the boil. Sit a bamboo steamer on top and carefully place the custards inside. Cover tightly and cook for 1 minute. Put a chopstick under the lid of the steamer for the steam to escape. This will ensure the custards cook evenly. Steam for a further 10 minutes, or until a skewer inserted into the centre of a custard comes out clean.
