Dressing

Ingredients

Quantity Ingredient
3 tablespoons japanese mayonnaise
1 teaspoon japanese rice vinegar
dash japanese rice vinegar
120g lotus root, peeled and thinly sliced
1/2 carrot, julienned
handful snow pea sprouts
salmon roe, to serve

Method

  1. To make the dressing, combine the mayonnaise and vinegar in a small bowl.
  2. Bring a saucepan of water to the boil. Add the vinegar and lotus root. Cook for 1 minute, or until tender. Drain and rinse under cold water.
  3. Combine the lotus root, carrot and sprouts in a bowl. Add the dressing and toss to combine. Top with some salmon roe to serve.
