Dressing

Ingredients

Quantity Ingredient
2 teaspoons japanese rice vinegar
2 teaspoons japanese soy sauce
1 teaspoon mirin
1/2 teaspoon caster sugar
1 tablespoon dried shredded wakame
1 small ripe pear, peeled, cored and julienned
50g daikon, julienned
40g mizuna leaves

Method

  1. To make the dressing, combine all the ingredients in a jug with 1 teaspoon of water.
  2. Soak the wakame in a bowl of cold water for 5 minutes, or until soft. Drain well and thinly slice.
  3. Combine the wakame, pear, daikon and mizuna in a serving bowl. Add the dressing and toss to coat.
