Method

  1. Thinly slice ¼ green cabbage and ¼ red cabbage and put them in a large bowl with 2 grated carrots, 6 finely chopped spring onions, 2 grated apples, such as granny smith, and 2 tablespoons finely chopped flat-leaf parsley. Season well with salt and freshly ground black pepper. When ready to serve, add 2 tablespoons lemon juice and 80 ml extra-virgin olive oil and toss well to combine. Delicious alongside roast chicken or pork ribs. Feel free to add some fresh sliced chilli to spice things up a bit, or even a handful of chopped pecans for extra crunch.
