Method

  1. Melt 2 tablespoons butter in a large heavy-based saucepan over medium heat. Add ½ thinly sliced red cabbage and cook for 3–4 minutes, stirring often. Stir in 80 ml red wine vinegar and 80 ml blackcurrant cordial. Cover and cook for 20 minutes, stirring often. Season with salt and freshly ground black pepper.
