Method

  1. Peel, core and finely dice 1 pineapple. Put it in a large saucepan with 200 g soft brown sugar, 125 ml cider vinegar, 1/2 diced red capsicum, 1 diced onion, 1 pinch mixed spice, 1/2 teaspoon ground cinnamon and 1/2 teaspoon sweet paprika. Bring to the boil, then reduce the heat and cook for 30 minutes, stirring often, until thick. Add water if it looks dry. Pour into sterilised jars and leave to stand for 4 weeks to allow the flavours to develop.
