A healthy and easy pudding from the Alsace region of France. Try it after a wintry Sunday lunch.

From the grocer

Ingredients

Quantity Ingredient
150g raisins
225ml orange juice or apple cider
80g butter, plus extra for greasing
125g soft light brown sugar
150g wholemeal breadcrumbs
whipped cream or creme fraiche, to serve

1 orange, grated zest
1kg tart eating apples

Method

  1. Preheat the oven to 180°C. Put the raisins and orange juice or cider in a small saucepan and bring to the boil. Reduce the heat and simmer gently for about 7 minutes. Remove from the heat. Add the orange zest and leave to stand for about 15 minutes so the raisins can plump up.
  2. Grease a 1 litre capacity baking dish with butter. Peel, halve, core and thinly slice the apples and arrange them in a layer in the dish. Sprinkle over some of the sugar and spoon on some of the raisins and their liquid. Next, add a layer of breadcrumbs then dot with some of the butter. Repeat until all the ingredients are used, finishing with a layer of breadcrumbs and butter.
  3. Bake for 40 minutes, or until the apples are tender – test with a skewer – and the top is golden. Leave to cool slightly and serve with whipped cream or crème fraîche.
