This is a great homely American dessert. If you don’t like the flavour of maple syrup leave it out and add an extra 40 g of soft light brown sugar.

Ingredients

Quantity Ingredient
150g soft light brown sugar
3 tablespoons sunflower kernels
1/2 teaspoon ground mixed spice
1/2 teaspoon ground ginger
250g stale brown bread, torn into little chunks
100g butter, melted, plus extra for greasing
25ml maple syrup
whipped cream or vanilla ice cream, to serve (optional)

2 cooking apples, peeled and cored
500g blackberries

Method

  1. Preheat the oven to 180ºC. Mix the sugar, sunflower kernels and spices together. Place the torn bread into a medium bowl and add 3 tablespoons of the sugar and spice mixture. Pour over the melted butter and mix well.
  2. Slice the apples thinly and mix with the blackberries and the rest of the sugar and spice mixture.
  3. Grease a 750 ml capacity gratin or pie dish and pile in half the bread mixture. Scatter the apples and blackberries on top and pour over the maple syrup. Add the rest of the bread mixture, loosely cover with foil and bake for 20 minutes. Remove the foil and bake for a further 20 minutes, or until the fruit is tender and the top golden.
  4. Serve with whipped cream or vanilla ice cream.
