Spiced red lentils with yoghurt, coriander & sesame seeds

Feel free to add other vegetables to this – it’s good with red capsicums and eggplant. Just sauté and add them to the pan before the lentils.

Ingredients

Quantity Ingredient
2 tablespoons olive oil
1 1/2 teaspoons ground cumin
2 teaspoons ground coriander
200g red lentils
300ml water or vegetable stock
400g tinned chopped tomatoes in thick juice
1 1/2 tablespoons tomato passata
salt and freshly ground black pepper
brown rice or burghul, to serve
greek-style yoghurt, to serve
1 tablespoon black sesame seeds, to serve

1 onion, roughly chopped
1 red capsicum, halved, seeded and chopped
1 red chilli, halved, seeded and finely chopped
lemon
a generous handful of coriander leaves, coarsely chopped

Method

  1. Heat the olive oil in a heavy-based saucepan and add the onion and capsicum. Cook over a medium–low heat, stirring a little, until soft, about 15 minutes.
  2. Add the cumin and ground coriander and cook for 2 minutes, stirring. Add the lentils, water or stock, tomatoes, tomato passata, salt and pepper, and chilli.
  3. Bring to the boil, then reduce the heat to a simmer and cook until the lentils have completely collapsed into a purée, about 25 minutes. Check every so often to make sure the mixture isn’t drying out – you want to end up with a thick soupy mixture.
  4. Taste for seasoning and stir in the squeeze of lemon juice and half the chopped coriander. Serve in bowls with brown rice or burghul, with a spoonful of Greek-style yoghurt on top. Sprinkle with the remaining chopped coriander and the sesame seeds.
