Method

  1. Mix 2 teaspoons chopped thyme (or 1 teaspoon paprika if you want it hot) with 100 g polenta, salt and freshly ground black pepper and the finely grated zest of 1 lemon.
  2. Mix together 1 egg and 1 tablespoon milk.
  3. Dip flattened boneless, skinless chicken breasts, fish fillets or fishcakes into the egg mixture and then in the polenta mixture.
  4. Fry in oil.
