You can double or triple the quantities for the muesli and store it in an airtight container for up to two weeks. The muesli can be eaten plain with cold milk or heated and served warm with apple as described below.

175g rolled oats with wheat bran, or standard rolled oats
25g pistachio nuts, chopped
50g hazelnuts, chopped
50g pitted dates, chopped
50g dried cranberries
2 tablespoons raisins
20g white sesame seeds
50g sunflower kernels
10g hemp seeds
10g linseeds
100ml milk, per person, to serve
10g unsalted butter, per person, to serve
1 teaspoon golden caster
sugar, per person, to serve
greek-style yoghurt, to serve
maple syrup, to serve

1/2 cored apple, per person, to serve

Method

  1. For the muesli, mix together the oats, pistachio nuts, hazelnuts, dates, cranberries, raisins, sesame seeds, sunflower kernels, hemp seeds and linseeds. You can store this mixture in an airtight container for up to 2 weeks.
  2. To cook the muesli, put 100 g muesli mix and 100 ml milk per person into a saucepan. Heat until almost boiling; stir gently, then remove from the heat and leave to stand for 5 minutes, covered, so that the oats can soften.
  3. Cut the ½ apple per person into thin wedges about 5 mm thick. Melt the butter in a non-stick frying pan over a medium heat and sauté the apple on both sides until golden and tender on the outside – the pieces can still be a little firm in the middle. Sprinkle with the sugar and toss to caramelise for 30–45 seconds.
  4. Serve the warm muesli with the yoghurt and the apples spooned on top, drizzled with a little maple syrup.
