Beer-battered crispy sprats with paprika mayonnaise

Sprats are delicious battered and deep-fried (what isn’t?). They are a bigger, meatier form of whitebait but I recommend cutting their heads off. This dish is simple yet evocative and it makes you feel as though you are not too far away from a warm beach.

Ingredients

Quantity Ingredient
100g plain flour
1 teaspoon garlic salt
50-75ml beer
400g sprats, heads removed, (if unavailable do use fresh anchovies or baby sardines)
200ml rapeseed oil
1/2 teaspoon sweet paprika
salt, to taste
white pepper, to taste
3 tablespoons mayonnaise
lemon wedges, to serve

Method

  1. First make the batter. Mix half the flour, the garlic salt and some white pepper in a bowl. Start whisking in the beer until you reach the consistency of a very thick, gloopy milkshake.
  2. Place the remaining flour in a shallow bowl and dust the sprats with it. Meanwhile, pour the oil into a heavy-based deep pan and place over a medium-high heat – you should have about 2.5 cm of oil in the pan.
  3. Dip the flour-dusted sprats in the batter and then fry them in the hot oil, in batches. Make sure the oil is hot enough – a drop of batter should sizzle and turn golden as soon as it hits the oil. Gently lower the sprats in by their tails, making sure you don’t splash yourself. Fry for a couple of minutes, until the sprats are crisp and golden.
  4. Whisk the paprika into the mayonnaise. Drain the sprats on kitchen paper and season with salt. Serve with lemon wedges to squeeze over and the paprika-mayonnaise to dip into.
