This makes enough for four servings of Green Celeriac Mash, but it can easily be frozen or stored in the fridge covered with a layer of olive oil for a couple of weeks. If you find yourself making this regularly, invest in a little ovenproof lidded dish for roasting the garlic.

Ingredients

Quantity Ingredient
1 whole garlic bulb
olive oil
sea salt
freshly ground black pepper

Method

  1. Preheat the oven to 160°C.
  2. Without removing the outer peel of the bulb of garlic, slice through it horizontally. Rub both cut halves with olive oil. Sprinkle with salt and pepper, then place the cut sides together, wrap the whole bulb in foil and bake in the oven for 40–50 minutes or until the garlic is soft and squidgy.
  3. Squeeze the flesh out of each clove and use it as stated in your recipe.
