Basic tomato sauce

This has less depth of flavour than the Rich Tomato Sauce and makes a great foundation for many tomato-based dishes. You'll need it for the Spring Greens Lasagne.

Ingredients

Quantity Ingredient
butter, or coconut or olive oil, for frying
1 medium onion, diced
sea salt
2 garlic cloves, finely chopped
2 x 400g cans chopped tomatoes
2 tablespoons tomato puree or concentrate
large pinch unrened brown sugar
1 tablespoon balsamic vinegar

Method

  1. Heat some butter, or coconut or olive oil in a medium saucepan and gently sweat the onion until soft and translucent.
  2. Add the garlic and fry for another minute or so, before adding the rest of the ingredients.
  3. Simmer for 15–25 minutes or until thick and somewhat reduced. If the sauce is too chunky, use a stick blender to blitz for a few seconds.
