Ingredients

Quantity Ingredient
vegetable oil, for oiling
200ml water
4 tablespoons powdered gelatine
40g cornflour
250g granulated sugar
150ml golden syrup
200ml condensed milk
100g unsalted butter
pinch salt
1/2-1 teaspoon red food colouring paste
1 teaspoon licorice oil flavouring
1 teaspoon strawberry oil flavouring
icing sugar, for dusting

Method

  1. Lightly oil 2 large baking trays and set aside. Place the water in a small bowl and sprinkle over the gelatine. Leave to soak for 5 minutes, then add the cornflour and mix well.
  2. Combine the granulated sugar, golden syrup, condensed milk, butter and salt in a saucepan. Place over the heat and stir until the sugar has dissolved. Stir in the gelatine mixture and mix well.
  3. Bring to the boil and insert a sugar thermometer. Cook the mixture until it reaches 121°C. While the mixture is cooking, add the red colouring and mix well.
  4. Remove from the heat, add the licorice and strawberry oil flavourings and mix well. Pour the mixture onto the prepared baking trays and leave for about 30–45 minutes until set and firm.
  5. Unmould the licorice onto a chopping board lightly dusted with icing sugar and, using a sharp knife, cut into 3 mm width strips to form laces. Place them on baking paper and leave to cool and dry completely for about 1 hour. Store in an airtight container in a cool dry place for up to a week.
