Green mangoes are a favourite snack in the Philippines, either dusted with salt, dipped in shrimp paste (bagoong) or pickled for sweet-tart burong mangga, which extends its enjoyment even longer.

Ingredients

Quantity Ingredient
3 green mangoes, peeled, stone removed and cheeks cut into 1 cm strips
220g caster sugar
2 teaspoons fine salt

Method

  1. Place the mango strips in a bowl and cover with cold water. Refrigerate overnight.
  2. To make the syrup, place the sugar, salt and 500 ml water in a small saucepan. Bring to the boil and stir until the sugar dissolves, then remove from the heat and allow to cool slightly.
  3. Drain the mango, place the strips in a large sterilised airtight jar, then pour over the warm syrup. Seal with a tight-fitting lid, then refrigerate for at least 3 days before serving. Burong mangga will keep in the refrigerator for up to 1 month.
