Cauliflower with coarse almonds

Ingredients

Quantity Ingredient
1 medium-sized cauliflower
75g whole almonds
1 garlic clove, crushed
1 lemon, juiced
1 tablespoon white wine vinegar
4 tablespoons olive oil
4 tablespoons chervil, chopped
or 4 tablespoons flat-leafed parsley, chopped
salt
pepper

Method

  1. Rinse and dry the cauliflower, cut it into very small florets and place in a bowl.
  2. Chop the almonds until medium-fine and mix them together with the crushed garlic, lemon juice, vinegar and olive oil, plus some salt and pepper.
  3. Mix the dressing with the cauliflower and leave to rest for 30 minutes. Season the salad to taste with salt and freshly ground pepper, then sprinkle with chervil or parsley before serving.
