The way we eat has changed enormously over the last couple of decades. We are influenced from all over the globe by the way we travel, or through migration, and most of the world seems to be within our reach when it comes to food. We have in our part of the world become inundated with choices. When I was growing up there were no more than two types of breakfast during the week, and a bit more for weekends. For lunch there was rye bread only, and so forth.

The way people work in each country also defines how our day is organized around meals. In Scandinavia 150 years ago, you ate something hot for lunch, then that changed to rye bread and cold cuts because people no longer went home for their lunch break, staying at the factory instead. So rye bread was the most convenient food for a lunchbox system.

Today, most companies have a canteen where you buy lunch, and that has evolved into a buffet style of eating, often with endless choices of hot or cold food and, if you ask me, too much choice. I like choice, and I like that we can eat different things every day, but it’s very important to take the seasons and food waste into account.

I must admit I frequently eat quite irregular meals during the day, because I am often not that hungry in the morning. I like that each day is not the same, that I can have a late breakfast one day, and then at other times I save my appetite for lunch. In this chapter there is a selection of things that I eat where the rules are abandoned. Nowadays I eat when I am hungry. Then, what is most important to me is that I enjoy my meals. I’d rather go hungry than grab something on the go.
