Hot chocolate and sweet buns

This is the quintessential hygge moment. Go for a long brisk walk in the woods in the autumn, with the wind in the trees and in your face, then return home to a warm house and enjoy home-baked buns and hot chocolate.


Quantity Ingredient
50g fresh yeast
400ml lukewarm whole milk
2 tablespoons lukewarm whole milk
100g soft butter
1 egg, lightly beaten
1 extra beaten egg, for brushing
600g strong white bread flour, plus extra for dusting
1 tablepoon caster sugar
10g sea salt
2 teaspoons ground cardamom
100g raisins
100g dried cranberries
100g hazelnuts, medium chopped

For the hot chocolate

Quantity Ingredient
350g good-quality dark chocolate, broken into pieces, (at least 60% cocoa solids)
2 litres whole milk
1-2 tablespoons caster sugar, to taste
200ml double cream, whipped, to serve


  1. Crumble the yeast into the milk in a large mixing bowl, stir to dissolve, then mix in the butter and egg. Mix the flour, sugar, salt, cardamom, dried fruits and nuts together, add to the milk mixture and give it a good stir with a wooden spoon to mix. Knead the dough lightly on a floured surface, then replace in the bowl, cover with cling film and leave to rise for 2 hours.
  2. Knead the dough gently again on a floured surface and form it into 20 buns, then place the buns on baking sheets lined with baking parchment. Cover with tea towels and leave to rise for 30 minutes. Preheat the oven to 200°C.
  3. Brush the risen buns with beaten egg and bake in the oven for 20–25 minutes, then leave to cool on a wire rack.
  4. For the hot chocolate, put the chocolate into a heavy-based saucepan and gently melt, stirring all the time, then add a quarter of the milk and stir it into the chocolate, followed by the remaining milk, mixing it well. Now stir in the sugar to taste, then bring the mixture to just under boiling point, stirring constantly so that it doesn’t scorch. Take off the heat and pour into mugs. Add spoonfuls of cold whipped cream to the tops and serve with the freshly baked buns, and some butter.
