Ingredients

Quantity Ingredient
1kg rhubarb, rinsed
500g cane sugar
1 unwaxed lemon, zested and juiced
2 vanilla pods

Method

  1. Trim and cut the rhubarb into 1-cm chunks. Place the sugar, lemon zest and juice in a pan and heat until the sugar begins to melt, but without turning brown. Add the rhubarb and vanilla pods (beans) and let it simmer, stirring now and then, until the rhubarb pieces are lightly mashed and the sugar has completely dissolved.
  2. Pour the mixture into a warmed sterilized jar and leave to cool.
