Before and after Christmas Day, all through December, we go to Christmas lunch at work, with our families, sports clubs – any excuse and people will arrange a Christmas lunch, so you end up going to quite a few. Often, more or less the same traditional menu is served. So I have steered away from that; I cook something lighter with the focus on vegetables. It's a time to prepare root vegetables and cabbage in all kinds of festive ways. Then I always do a cured salmon, which is tradition, and in December I use what I call Christmas spices, full of dark, warming flavours. I invite my female friends over, we drink champagne and then the highlight is the cake. There is never a party without cake in my house. We talk about the past year, Christmas, the planning and just how our life is going – a lovely afternoon in the name of hygge.
