Kale salad with Jerusalem artichokes

A modern salad... but with a very traditional dressing. I think this was more or less the only dressing my grandmother used, though she would add vinegar where I use lemon.

Ingredients

Quantity Ingredient
300g kale, trimmed, thick stalks removed
150g jerusalem artichokes
250ml double cream
2 tablespoons caster sugar
1 unwaxed lemon, juiced
1/2 unwaxed lemon, finely grated zest
salt
freshly ground black pepper

Method

  1. Rinse the kale in cold water and leave to drain in a colander. Gently squeeze the leaves to remove as much water as possible, without crushing them.
  2. Rinse the Jerusalem artichokes, scrub well, and cut into very thin slices, using a mandolin if you have one. Mix the kale and the Jerusalem artichokes. Mix the cream, sugar and lemon juice and zest and immediately pour it over the vegetables, tossing well, so the Jerusalem artichokes don’t discolour. Check for seasoning, and serve.
