Here is a fun and easy way to make a gingerbread decoration. It can be difficult to make a house, especially for small children, so this is a great solution. The only borders to your gingerbread town are your imagination! You can make anything: houses, trees, cars, or even a castle.

For the dough

150g dark soft brown sugar
250g golden syrup
150g salted butter
1 teaspoon ground ginger
3 teaspoons ground cinnamon
1/2 teaspoon ground cloves
2 teaspoons bicarbonate of soda
1 egg, beaten
550g plain flour, sifted, plus more to dust
1 piece cardboard

For the icing

Quantity Ingredient
1 egg white
125g icing sugar
selection of food colours


  1. Melt the sugar, syrup and butter in a saucepan. Add the spices and bicarbonate of soda and stir well. Cool the mixture, then mix in the egg and flour. Wrap in cling film and allow to rest for one hour in the fridge.
  2. Draw the figures you would like to have – a tree, house, car, ‘nisse’ (elf) – and cut them out of the cardboard to make templates.
  3. Preheat the oven to 200°C.
  4. Roll the dough out on a floured surface to about 5mm thick. Place your templates on the dough and cut out the gingerbread with a small sharp knife. If you want to hang them up, make a hole in each with a pencil. Place on a baking tray lined with baking parchment and bake for eight minutes. Leave to cool on a wire rack.
  5. For the icing, mix the egg white and icing sugar, divide between small bowls and add different food colours. Form piping bags from pieces of baking parchment and fill them with icing, then use them to decorate the pieces of gingerbread. Leave until the icing is dry before hanging up your little gingerbread decorations, if you want.
