I’ve become a little evangelical about these cakes. Why? For one, they’re the simplest cakes I’ve ever encountered. You have a blender or a food processor? You have a loaf tin? You have an oven? Done. There’s no flour, so they’re perfect for your gluten-intolerant friends. And together they form two sides of one joyous coin. The first is dark with chocolate and will satisfy even the most insane hormonal craving. The second is angelic with rose water, almonds and raspberries. These are both my go-to, emergency cakes, taking turns week on week. They’re smart enough to be served warm with crème fraîche or double cream. They’re sturdy enough for lunch boxes. They’re not so evil that you couldn’t justify a slice at 3pm with a cup of tea after you’ve tottered to the post office. I don’t want to get too crazy here, but there’s every chance that these cakes may change your life.

Ingredients

Quantity Ingredient
1 x 400g tin of black beans, rinsed
3 eggs
100g caster sugar
1 shot espresso
or 1 tablespoon strong filter coffee
3 tablespoons cocoa powder
1 teaspoon baking powder
125g cherries, pitted, plus extra to serve
icing sugar, yoghurt, creme fraiche or fresh cherries, to serve (optional)

20 x 12.5cm loaf tin, greased and lined with baking paper

Method

  1. Preheat the oven to 180˚C.
  2. Using a stick blender and mixing bowl, blender or food processor, combine all the ingredients except the cherries and blitz until smooth. The batter will appear quite liquidy but don’t worry. Pour the batter into the prepared loaf tin and scatter the cherries over the top.
  3. Bake the loaf in the preheated oven for 35 minutes, or until a skewer inserted in the middle comes out with a few fudgy crumbs on it.
  4. Leave to cool in the tin for 5 minutes, then turn it out. Dust with icing sugar and serve warm with more cherries, yoghurt or crème fraîche for dessert, or allow it to cool and enjoy it with a cup of tea.
