I should say upfront that this version of the classic Indonesian vegetable salad topped with satay sauce is much closer to what I made when I was studying Bahasa as a 13-year-old in Sydney than what you’d find in a kantin in Jakarta. But at its heart what remains is a great way to gussy up greens and the like when you just can’t face one more stir-fry. You can substitute whichever vegetables you prefer: carrot batons and courgette would make fine additions. The traditional iteration will have a more exotic blend of roots and spices. It will also commonly play host to hard-boiled eggs. On a Wednesday night I prefer this quick version. I also like how the runny yolk in a five-minute egg adds a golden gloss to the dressing. Serve this on its own, or as a more substantial side for grilled chicken or fish.

Ingredients

Quantity Ingredient
100g mangetout, cut into thirds
100g broccoli or broccolini, cut into manageable pieces
1 red pepper, deseeded and cut into batons
1/4 white cabbage, finely shredded
50g beansprouts
2 eggs, boiled for 5 minutes, then plunged into cold water and shelled

Spicy peanut sauce

Quantity Ingredient
3 tablespoons peanut butter
2 tablespoons cashews
1 lime, grated zest and juiced
2cm lump of ginger root, peeled and grated
1 garlic clove, peeled and grated
1 small red chilli, deseeded and chopped
3 tablespoons water
1 1/2 teaspoons light soy sauce
A pinch sugar

Method

  1. Lightly steam the mangetout and broccoli or broccolini until they are soft but still retain some bite. Combine the steamed vegetables with the raw red pepper, cabbage and beansprouts and divide between 2 plates.
  2. To make the spicy peanut sauce, put all the ingredients in a food processor and whizz to a paste.
  3. Dab the plates of salad with the sauce. Place the peeled, boiled egg in the centre of the plate and allow people to puncture their own yolk.
